I followed this recipe.
I used extra virgin olive oil because that’s what I had on hand. I set the egg out this morning and picked up a fresh lemon at market this afternoon.
I used my blender and it took all of five minutes to get this.
It does have a slight olive taste but as an olive lover I like that.
It’s not white white, it’s a creamy white. It has an egg, lemon juice, dry mustard and olive oil in it (plus salt), that combination isn’t going to be white.
In the end I only used 3/4 cup of the oil. Your mileage may vary.
Who knew this was so easy? Why would I ever buy regular mayonnaise again?
